Tasting Note: Rich, complex Amarone, many-layered yet instantly likeable, with long-lasting notes of dried fruit, tobacco and hints of vanilla.
Food Matching: Heavy and flavourful enough to hold its own against a variety of game stews and roasted red meets. Also pairs excellently with long-seasoned cheeses.
Vineyard: Grapes grow in vineyards high in the hilll of Negrar on predominantly limestone and skeletal soil, which lowers yields but improves quality. A milder climate, with high temperature variation, influences the ripening of the fruit and ensures aromas are retained.
Vinification: Grapes are crushed with their stalks in the first week of January, before being fermented between 21°-23°. Maceration on skins occurs for 35 days to gain depth of colour and flavour. At the end of May, the juice is transferred into new oak barrels and refined for 24 months, undergoing complete malolactic fermentation. The wine is then refined in bottle for 8 months.
