Tasting Note: A subtle and complex sparkling wine, made from pure Pinot Noir. Very pale pink in appearance, this could easily be top notch rosé Champagne, with its classy strawberry ice cream, rose and violet petal nuances. A mouthful of red fruits: wild strawberries, blueberries, and redcurrants, balanced by citrus freshness of grapefruit and notes of fennel and fresh herbs. The ageing is manifested with hints of butter puff pastry and creme caramel. Alongside the maturity is exceptional freshness, and a beautifully fine, well-integrated mousse of super-fine bubbles.

Vineyard: Gramona are steeped in history and revered for their long lees aging, a process that came from the neccesity of having to block up their cellars to avoid looting during the Spanish Civil War. The biggest asset is the land and they have gone to great lengths to recover the soils and now have a fully integrated biodynamic approach where all preparations are made on site and cover crops are spontaneously sown. The vines share the land with chickens, cows, sheep and horses all in an effort to maintain a natural equilibrium within the soil. Heralded as the finest Sparkling Wines of Spain their hard work has paid off winning high praise from all critics as the only Spanish house to rival top Vintage Champagne. Truly an artisan product, the wines which see more than 5 years lees aging are all aged on cork as it slows the oxidation process. This means these wines are all riddled and disgorged by hand (you can still see the chalk mark in the punt of the bottle where it was turned during riddling.
Vinification: Ageing Ageing Aged on their lees “sur lattes” for over 30 months with cork stopper. Varieties 90% Pinot Noir, 10% Chardonnay Vol. 12 % Dosage Brut Nature Nº bottles 8.214 Production After long work in the vineyards to achieve optimal ripeness, the grapes are picked by hand and placed in 20kg boxes. Bunches are selected on the sorting table, transferred by gravity and they are pressed whole to extract just 50% of the juice, carefully separating the different parts of the pressing. The wine is fermented at 14°C in 600 and 300 litre French oak barrels of several uses in a temperature controlled cold chamber. The result is a fresh, elegant base wine with a good solid frame. One of or rules from the outset has been to achieve harmony between the aromatic expression of the grape variety, preserving its characteristic pale hue but avoiding the extraction of too much tannin. It is aged in bottles stored on their sides (‘sur lattes’) for over 36 months. The process is 100% artisanal. The bottles are sealed with a cork stopper throughout the time they spend resting in the silence of the cellars, which enables the longest ageing periods.
