Tasting Note: Intense, with fabulous tension between distinct maturity and youthful freshness. Aromas of baked apple, ripe pear, lemon and grapefruit zest, then dried flowers and herbs: fennel and rosemary. Exceptionally long ageing of 80 months prior to release has brought about decadent and complex notes of hazelnut, pastry, toast, brioche and toffee. This is a top-notch fine sparkling wine that becomes increasingly expressive as it opens up in the glass. Immediately evident concentration, with great structure and a superbly-fine, creamy mousse of vanishingly tiny bubbles. Candied fruit and complex, balsamic flavours, and yet with a lively, refreshing finish.

Vineyard: Gramona are steeped in history and revered for their long lees aging, a process that came from the neccesity of having to block up their cellars to avoid looting during the Spanish Civil War. The biggest asset is the land and they have gone to great lengths to recover the soils and now have a fully integrated biodynamic approach where all preparations are made on site and cover crops are spontaneously sown. The vines share the land with chickens, cows, sheep and horses all in an effort to maintain a natural equilibrium within the soil. Heralded as the finest Sparkling Wines of Spain their hard work has paid off winning high praise from all critics as the only Spanish house to rival top Vintage Champagne. Truly an artisan product, the wines which see more than 5 years lees aging are all aged on cork as it slows the oxidation process. This means these wines are all riddled and disgorged by hand (you can still see the chalk mark in the punt of the bottle where it was turned during riddling.
Vinification: Aged Aged on their lees “sur lattes” for over 70 months with cork stopper. Varieties 65% Xarel.lo, 35% Macabeo. Vol. 12 % Brut Nature Non dosage We assume responsibility for each and every step involved in the winemaking pro-cess, from the vine to the bottle. The grapes are picked by hand, go onto a sorting belt, are transferred by gravity, and pressed whole bunch. This sparkling wine is aged for more than 70 months. 100% artisanal process. The bottles are sealed with a cork stopper throughout the time they spend resting in the silence of the cellars, which enables the longest ageing periods. We use ‘pupitre’ racks, and riddling. Non dosage. Organic & biodynamic viticulture Based on careful observation and the management of the factors which influence our terroir and its habitat. We do not apply chemical herbicides or pesticides, but instead we use natural resources, with the primary aim of maintaining a balance in the environment, and we preserve spontaneous ground cover in order to obtain spongy soils. Through biodynamics, which goes one step beyond organic growing, we breathe life into our vineyards and seek to raise levels of biodiversity: we preserve spontaneous ground cover in order to obtain spongy soils, we apply plant-based infusions and decoctions to avoid pest infestations, and we produce our own animal and vegetal compost from our orchard of medicinal plants and our farm of cows, sheep, chickens, and horses. Estate Font de Jui Finca Font de Jui consists of about 22.5 hectares, among them, 15 are Xarel·lo and 7.5 Macabeo. They spread from the Anoia River (La Plana, 100 meters above sea level) to the Mas Escorpi hill (300 meters above sea level), which overlooks the town of Sant Sadurní, and its southern slopes. Its soil is clay-limestone: sandy layers along the river and very rocky in the higher and drier areas. Gramona’s organic and biodynamic approach on the Finca, as with all of their land, enriches life in the soil, and helps the plants to better adapt to climate change.
